Preparazione
Prep the Veggies and Halloumi
- Toss the sliced red pepper, yellow pepper, and red onion in a bowl with 1 tablespoon of olive oil, dried oregano, garlic powder, salt, and black pepper.
- Heat a large non-stick frying pan or griddle pan over medium-high heat.
Cook the Fillings
- Add the seasoned vegetables to the hot pan. Sauté for 6-8 minutes until they are softened and slightly charred at the edges. Transfer to a plate and keep warm.
- In the same pan, heat another tablespoon of olive oil over medium-high heat. Add the halloumi slices in a single layer. Cook for 2-3 minutes per side until beautifully golden-brown and crispy.
Assemble the Wraps
- Warm the tortilla wraps in a dry pan for 10-15 seconds on each side, or microwave them for 20 seconds to make them pliable.
- Spread a generous tablespoon of hummus down the center of each wrap.
- Top with a handful of fresh baby spinach, followed by the warm sautéed peppers and onions, and finally the golden halloumi slices.
- Fold in the sides of each wrap and roll up tightly. Slice diagonally and serve immediately.
