Preparação

Prep the Veggies and Halloumi

  1. Toss the sliced red pepper, yellow pepper, and red onion in a bowl with 1 tablespoon of olive oil, dried oregano, garlic powder, salt, and black pepper.
  2. Heat a large non-stick frying pan or griddle pan over medium-high heat.

Cook the Fillings

  1. Add the seasoned vegetables to the hot pan. Sauté for 6-8 minutes until they are softened and slightly charred at the edges. Transfer to a plate and keep warm.
  2. In the same pan, heat another tablespoon of olive oil over medium-high heat. Add the halloumi slices in a single layer. Cook for 2-3 minutes per side until beautifully golden-brown and crispy.

Assemble the Wraps

  1. Warm the tortilla wraps in a dry pan for 10-15 seconds on each side, or microwave them for 20 seconds to make them pliable.
  2. Spread a generous tablespoon of hummus down the center of each wrap.
  3. Top with a handful of fresh baby spinach, followed by the warm sautéed peppers and onions, and finally the golden halloumi slices.
  4. Fold in the sides of each wrap and roll up tightly. Slice diagonally and serve immediately.
